I've wondered something about fast charging, when I turn on the power, does the car draw energy from the charger, the lithium-ion battery, or the 12V battery? I'm eager to use the climate system while charging, and I hope it doesn't rely on the 12V battery, also when I remotely start the climate system via the app, how long will it run, 30 minutes, 15 minutes, or another duration altogether?

The car draws energy from the lithium-ion battery. On the second question, I think it is 15 minutes.

What I know is that the car should replenish its energy by drawing power from the charging station. If you utilize a less powerful charger, say a 50 kW unit, the energy transfer to the battery will be slightly reduced, which will result in a slightly slower charging time of approximately 15 minutes longer.

When you fast charge your EV the charger sends power straight to the big battery not the small 12V one. That little 12V battery just runs things like lights and radios and it gets charged by the main battery. Using the AC while charging won't touch the 12V. When you use the app to start the AC remotely it usually runs for about 10-15 minutes but you can sometimes make it run longer. It's meant to cool or heat your car without using too much battery.
